Rock, Scissors, Paper...Kaya?

I haven't been feeling too well the last 2 days. Sore throat and flu, the usual culprits. But i'm feeling slightly better after sleeping for 11 hours straight yesterday night. Somehow when you're sick, you miss home even more :( where there'd be someone to take care of you.

When i miss home, i try to bring a little of home to where i am. Today, it's homemade kaya. (Melly's response: you mean you can make kaya at home? I thought u had to do it in a factory! hahahah) Anyways, it's my grandma's recipe and she never gives me exact measurements. She's always 'agar-agar'. haha there's so much i wanna learn from her! So, I have not yet perfected the exact proportion of eggs, sugar, coconut cream and pandan leaves to add, but i'm on my way there. So perhaps after i've achieved a more consistent result, i'll report back with the recipe (: i think i've got it!

Homemade kaya in a jar

The lighting is quite bad so the colour looks slightly odd. Anyways, the recipe itself is pretty simple really, but it's getting the right ratio of ingredients, and getting the right texture that is the tricky part. But i must say i've improved! Today was my third time trying it, and it's actually pretty smooth! well, by my standards at least. Of course it requires a second opinion.

I don't have the equipments to extract juice out of the pandan leaves so i just tied them and put it in the pot.
After slowly removing all the pandan leaves, and it's done!

Ingredients:
- 4 eggs
- 5 tablespoon full of sugar
- 3/4 - 1 tablespoon of coconut cream OR 1.5 tablespoon of coconut milk
- juice from 6 Pandan leaves OR about 7 - 8 pandan leaves tied up (see photo above)

How to do it:
1. Mix all the above ingredients thoroughly in a bowl (incl. pandan juice and if you're using that, skip to step 3).
2. Place pandan leaves into a pot.
3. Sieve the mixture into pot
4. Cook and stir constantly for about 20minutes.
5. Voila! it's done. Let it sit and cool for a short while and put it in a empty glass jar

(My grandma didnt say to cook it under high or low heat so i put it at medium and then switch it to low towards the end)

Cooking is therapeutic. Especially when i'm left alone to just do that in my own time. It's like i'm in my own world. But it's time i get down to studying, Sciences Po way. I havent been preparing for classes or doing my readings and i'm pretty lost, doesn't help that i can barely concentrate due to headaches and my flu. I just stone in class, which is obviously not good. So, tomorrow onwards, it's back to the nerdy me. Time to mug again, first exposé in 4 days!
